And I can honestly say itโ€™s definitely worth the hype! This might be our new favorite sandwich!

Ingredients

Main Ingredients

  • 1 avocado
  • 1 tomato, sliced
  • Broccoli sprouts (optional)
  • 3 slices Bread

Pesto

  • 2 tbsp olive oil
  • 0.5 cup (12 g) fresh basil
  • 2 tbsp fresh parsley
  • 1 garlic cloves
  • 2 tbsp lemon juice
  • 0.25 cup (33.75 g) toasted pine nuts
  • Salt and pepper to taste

‘Tuna’ Mousse

  • 1.5 cups (246 g) cooked chickpeas
  • 150 g silken tofu
  • 1 nori sheets
  • 1 tbsp capers
  • 2 tbsp lemon juice
  • 0.25 cup (11.75 g) fresh dill
  • 1 tbsp dijon mustard
  • 1 tbsp nutritional yeast
  • sea salt flakes

Instructions

  • Begin by preparing the pesto. Combine olive oil, fresh basil, fresh parsley, garlic clove, lemon juice, toasted pinenuts, and salt & pepper in a blender. Blend until you achieve a smooth consistency.
  • Next, prepare the ‘tuna’ mousse. In a food processor, combine cooked chickpeas, silken tofu, nori sheet, capers, lemon juice, dill, dijon mustard, Nooch, and salt. Blend until smooth.
  • Now, assemble the sandwich. Spread a generous amount of ‘tuna’ mousse on a slice of bread. Add sliced avocado, tomato, and optional broccoli sprouts. Spread pesto on another slice of bread and place it on top.
  • Repeat the process for the remaining sandwiches. Enjoy your vegan ‘Tunacado’ sandwich immediately, or store in the refrigerator for later.
