Begin by preparing the pesto. Combine olive oil, fresh basil, fresh parsley, garlic clove, lemon juice, toasted pinenuts, and salt & pepper in a blender. Blend until you achieve a smooth consistency.
Next, prepare the 'tuna' mousse. In a food processor, combine cooked chickpeas, silken tofu, nori sheet, capers, lemon juice, dill, dijon mustard, Nooch, and salt. Blend until smooth.
