- 2 cups edamame
- 2 bok choy, diced
- 2 tbsp tamari
- 2 scallions (spring onions), diced
- 1.5 servings soba noodles
- 1 tbsp chilli oil
- 3 garlic cloves, diced
- 1 tbsp sesame seeds
- 2 tbsp almond butter
- 1 lime, juiced
Instructions
- Cook the soba noodles as per the instructions on the packet.
- In a pan over medium heat, add the chilli oil and diced garlic. Cook for about a minute until the garlic is fragrant.
- Add the diced spring onions, edamame, and the stem part of the diced bok choy to the pan. Cover and cook for 2 minutes until the vegetables are slightly tender.
- In a separate bowl, combine the almond butter, lime juice, and tamari to create the sauce.
- Add the cooked noodles, the green parts of the bok choy, and the prepared almond sauce to the pan. Stir well to combine and cover the pan. Cook until the greens are just wilted.
- Serve the Edamame Soba Noodle Bowl with a sprinkle of sesame seeds on top. Enjoy your quick and nutritious meal!
