Ingredients

  • 2 cups (296 g) edamame
  • 2 bok choy, diced
  • 2 tbsp tamari
  • 2 scallions (spring onions), diced
  • 1.5 servings soba noodles
  • 1 tbsp chilli oil
  • 3 garlic cloves, diced
  • 1 tbsp sesame seeds
  • 2 tbsp almond butter
  • 1 lime, juiced

Instructions

  • Dice the vegetables. Cook the soba noodles according to the package instructions.
  • In a pan on medium heat, add the chilli oil and garlic. Cook for a minute.
  • Add the spring onions, edamame, and stem part of the bok choy to the pan. Cover and cook for 2 minutes.
  • In a separate bowl, combine the almond butter, lime juice, and tamari to create the sauce.
  • Add the cooked noodles, green parts of the bok choy, and almond sauce to the pan. Stir well and cover. Cook until the greens are just wilted.
  • Serve the stir fry sprinkled with sesame seeds. Enjoy your quick and nutritious meal!
