Instructions
Dice the vegetables. Cook the soba noodles according to the package instructions.
In a pan on medium heat, add the chilli oil and garlic. Cook for a minute.
Add the spring onions, edamame, and stem part of the bok choy to the pan. Cover and cook for 2 minutes.
In a separate bowl, combine the almond butter, lime juice, and tamari to create the sauce.
Add the cooked noodles, green parts of the bok choy, and almond sauce to the pan. Stir well and cover. Cook until the greens are just wilted.
Serve the stir fry sprinkled with sesame seeds. Enjoy your quick and nutritious meal!
