Berry Overnight Oats in a jar

Overnight oats are one of our favourite ways to start the day. They are so easy to prepare, can be made a few days in advance and taste delicious! The combo of high fibre and polyphenols (which you get from the berries) makes it an ideal breakfast to promote gut health!

Berry Overnight Oats

Easy-to-prepare and delicious overnight oats with a high fibre content and polyphenols from berries, promoting gut health. Perfect for a quick breakfast.

Ingredients

Main

  • ½ cup (40.5 g) oats
  • 1 tbsp chia seeds
  • ½ cup (60 g) raspberries
  • ½ cup (118.29 ml) soy milk
  • 1.5 tbsp (30 g) coconut yogurt
  • 1 tsp (4.93 ml) maple syrup - optional

To serve

Instructions

  • Add the milk, raspberries, and maple syrup to a blender. Blend until you achieve a smooth consistency.
  • In a jar, combine the oats, chia seeds, coconut yogurt, and the blended raspberry liquid. Stir until the mixture is thoroughly combined.
  • Refrigerate the mixture overnight, or at least for a few hours, to allow the oats to absorb the liquid and soften.
  • When ready to serve, top with your favorite toppings such as additional coconut yogurt, fresh raspberries, and coconut flakes.

    It’s so easy to make and so delicious! I look forward to breakfast when I’ve prepped this. I skip the toppings because I’m always in a bit of a hurry in the morning, but it still tastes super good!
