This colorful tofu sushi bowl is one of our go-to’s. It’s so easy to put together, nourishing, and absolutely delicious! I can never have enough! The best part is that it tastes just as good cold, so you can pack the leftovers for work. With 30g of protein combined with fiber and healthy fats, it is sure to keep you feeling full and satisfied for the day ahead.
The leftover marinade can be used to cook more tofu, sauté some veggies in a stir fry, or mix it with your rice.

Tofu Sushi Bowl
A colorful, nourishing, and delicious tofu sushi bowl that’s easy to prepare and perfect for work lunches. It’s packed with 30g of protein, fiber, and healthy fats.

Ingredients
- 2 cups (390 g) brown rice, cooked
- 1 small cucumber, finely sliced
- ½ avocado
- 4 radishes, sliced
- 1 tbsp toasted sesame seeds
- 2 spring onions, finely chopped
- 2 tbsp pickled ginger
- 1 tbsp sriracha mayo
- 2 nori sheets, each cut in 4
Tofu marinade
- 300 g extra firm tofu, diced in cubes
- 2 tbsp tamari
- 1 tbsp sriracha
- 1 tbsp rice vinegar
- 0.5 tbsp maple syrup
- 1 tsp sesame oil
Instructions
- Combine all the tofu marinade ingredients in a bowl. Stir in the tofu and allow it to marinate for up to overnight for maximum flavor.
- Bake the marinated tofu in the air fryer at 350 degrees F (180 C) for 15 minutes, or in the oven at 400 degrees F (200 C) for 20 minutes.
- To assemble the bowl, add 1 cup of cooked rice, some baked tofu, cucumber, avocado, and radish slices. Top with toasted sesame seeds, finely diced spring onions, pickled ginger, and a drizzle of sriracha mayo.
- You can use the nori sheets square to scoop up the delicious food or sprinkle it on top. Enjoy your nutritious and satisfying meal.
