When I saw those little bites on TikTok from @torminell, I knew I had to try and veganize them. They’re going viral, and we can totally see why. Who doesn’t love a crunchy, savory bite?

To veganize them, we used the marinade from my tofu salmon recipe. Verdict? It was absolutely delicious. Now, we know it has nothing to do with traditional sushi—they’re more like little poke bowls in a cup—but if you’re looking for a new, fun, and easy snack, it’s definitely a hit!

These spicy tofu sushi muffins are a fun, easy snack, inspired by a viral TikTok trend. They’re made with sushi rice, avocado, tofu salmon, and topped with sesame seeds, spring onion, and sriracha mayo.

Ingredients

Main Ingredients

Tofu Salmon

  • 5.2 oz (150 g) extra-firm todu - diced in small cubes
  • ¼ cup (60 ml) water
  • ¼ beetroot, cooked
  • 1 tsp (6 g) white miso paste
  • ½ tbsp (7 ml) rice vinegar
  • 1 tsp (5 ml) soy sauce
  • 1 nori sheets
  • ½ tsp (1 g) garlic powder
  • 1 tsp (5 ml) sesame oil

Muffins

  • 1 cup (200 g) cooked sushi rice - from 1/3 cup dry
  • ¼ avocado - finely diced
  • 1 tbsp (9 g) toasted sesame seeds
  • 1 spring onions - finely chopped
  • 1 tbsp (15 ml) Sriracha mayo

Instructions

  • Prepare the tofu salmon marinade: blend water, cooked beetroot, white miso paste, rice vinegar, soy sauce, nori sheets, garlic powder, and sesame oil until smooth. Marinate the diced tofu for at least 2 hours, or overnight for the best results.
  • Preheat your oven to 200°C (392°F). Cut the nori sheets into 4 equal squares. Press some sushi rice into the middle of each square and place them in a muffin tray. Top each one with some marinated tofu salmon.
  • Bake the sushi muffins in the oven for 15 minutes.
  • After baking, top each muffin with diced avocado, sesame seeds, and spring onion. Drizzle some sriracha mayo on top. Serve immediately for a crunchy, savory bite
