Ingredients
- 2 cups (374 g) cooked Orzo
- 1 cup (133 g) cucumber diced
- 1 cup (149 g) diced tomatoes
- 1.5 cups (246 g) cooked chickpeas
- 2 tbsp Vegan feta
- 0.5 red onions, finely diced
- 10 green olives, pitted and chopped
- 0.5 cup (12 g) fresh basil - packed
- 2 cups (40 g) greens (lettuce, rocket, baby spinach…)
- 4 tbsp pine nuts toasted
- 3 tbsp olive oil
- 2 Lemon juiced
- 3 dashes sea salt flakes
Instructions
- Add all the ingredients to a large bowl.
- Stir well to combine, ensuring all ingredients are evenly distributed.
- If meal prepping, keep the greens separate and add at the last moment to maintain freshness.
