Perfect for the holidays, these chocolate matcha truffles are a delicious, feel-good snack that are also a great little pick-me-up, thanks to the matcha.
Matcha is a fantastic source of L-theanine – up to five times as much as green tea, which can improve focus and alertness whilst reducing stress. It can even counteract the anxious or jittery feelings you may get from consuming coffee. It does contain caffeine (about a third of that in coffee), so it’s best to avoid consuming it too late in the day to ensure it doesn’t impact your sleep.

Matcha Bounty Bites

Ingredients
- 1 cup (80 g) shredded coconut
- 1 cup (179 g) cooked cannellini beans
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 2 tsp matcha
- 1 tbsp melted cacao butter or coconut oil
- 40 g dairy-free dark chocolate
Instructions
- Add the shredded coconut, white beans, vanilla extract, maple syrup, and matcha to a food processor. Process until a dough is formed.
- Roll the mixture into 10 individual bites. Refrigerate for 15 minutes.
- In a microwave-safe dish, add the chocolate and cacao butter. Heat up 20 seconds at a time, stirring in between, until you get a smooth consistency.
- Using two forks, dip each bite in the chocolate until completely coated. Repeat for all the bites. Refrigerate for 1 hour to set. Sprinkle with more matcha if desired.
- Keeps 5 days in the fridge. Enjoy.
