Ingredients
1cupshredded coconut
1cupcooked cannellini beans
1tspvanilla extract
2tbspmaple syrup
2tspmatcha
1tbspmelted cacao butter or coconut oil
40gdairy-free dark chocolate
Instructions
Add the shredded coconut, white beans, vanilla extract, maple syrup, and matcha to a food processor. Process until a dough is formed.
Roll the mixture into 10 individual bites. Refrigerate for 15 minutes.
In a microwave-safe dish, add the chocolate and cacao butter. Heat up 20 seconds at a time, stirring in between, until you get a smooth consistency.
Using two forks, dip each bite in the chocolate until completely coated. Repeat for all the bites. Refrigerate for 1 hour to set. Sprinkle with more matcha if desired.
Keeps 5 days in the fridge. Enjoy.
