“This is honestly the easiest snack ever. I started making it when we first went vegan seven years ago (back when the only vegan sweet at our local shop was Oreos!), and it still holds up! I love the taste of chocolate (and, omg, the way the chocolate layer cracks when you bite into it is amazing), but it’s even more satisfying than just a couple of squares of chocolate.

These Choc Banana Bites are a quick, satisfying snack combining dark chocolate, cacao butter, and bananas for a delicious treat.

Ingredients

Choc Banana Bites

  • 2 banana
  • 3 tbsp (50 g) peanut butter
  • 1.8 oz (50 g) dark chocolate (70%)
  • 1 tbsp (13 g) cacao butter - Optional. Makes the melted chocolate more liquid and easier to work with.

Instructions

  • Cut the bananas in ½ to 1 cm slices. Top half the bananas with a teaspoon of peanut butter. Close with a second slice of banana, to make a mini banana sandwich. Place in the freezer for 30 minutes to harden.
  • Melt the dark chocolate and cacao butter together in a bowl. The ratio should be 3/4 chocolate to 1/4 cacao butter. This makes the melted chocolate a bit more liquid and easier to work with. You can either melt it in the microwave, 30 seconds at a time, or use a bain-marie method.
  • Dip the banana into the melted chocolate mixture, ensuring it's fully coated. You can use tongs or 2 forks to hold the bananas.
  • Place the coated banana on a tray and let it set in the fridge until the chocolate hardens. You can also keep them in the freezer, for a delicious frozen treat. Enjoy!
