Chia puddings are so easy to put together, and it brings me so much joy when I head to the fridge for a snack and spot one that I made earlier! This one is particularly delicious and, of course, so nutritious. If you don’t have a blender on hand and want that bright pink color, you could mix water, lemon, maple syrup and açai powder. So easy yet so tasty and nourishing!

A delightful and nutritious Chia Pudding, easy to prepare and perfect for a snack or breakfast. Made with chia seeds, berries, mango, and coconut yogurt.

Ingredients

  • 6 tbsp chia seeds
  • 1 cup (155 g) frozen berries
  • 1 cup (236.59 ml) water
  • ½ lemon, juiced
  • 2 Medjool dates, pitted
  • 1 mango (can substitute for frozen)
  • 4 tbsp coconut yogurt
  • 1 handful nuts
  • 1 handful fresh mint (optional)
  • 1 tbsp coconut flakes

Instructions

  • In a blender, combine the dates, berries, water, and lemon juice. Blend until the mixture is perfectly smooth.
  • In a separate bowl, combine the chia seeds and the blended liquid. Stir well to combine and allow it to sit in the refrigerator for at least 30 minutes, or overnight for best results.
  • Chop and mash the mango. If desired, stir in some fresh mint leaves for added flavor.
  • Assemble the pudding in a jar in the following order: mango purée, chia pudding, coconut yogurt, nuts, and coconut flakes. Enjoy immediately or store in the refrigerator for up to 3 days.
