This salad is so delicious and nourishing, and it comes together really easily! Perfect for a warm summer lunch 🥰

Initially, I didn’t plan on adding maple syrup to this one, but on the day of filming, my orange wasn’t super sweet, so I decided to add a bit of sweetness. This is a good example of how ingredients can vary, and I encourage you to experiment with your own ingredients; maybe your oranges will be super juicy and sweet, and you can add 3 tbsp of juice and skip the syrup!

Avocado Soba Noodle Salad with Orange Ginger Dressing

Ingredients

Main Ingredients

  • 90 g dry soba noodles
  • 1 large carrots - peeled
  • 2 cups red cabbage, shredded
  • 2 scallions - finely chopped
  • 1.5 cup shelled edamame - thawed – see notes
  • ½ cup cilantro - finely chopped
  • ½ avocado - sliced
  • 1 tsp sesame seeds

Orange Ginger Dressing

  • 2 tbsp fresh orange juice
  • 1 tbsp ginger minced
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tsp maple syrup - adjust based on sweetness of orange

Instructions

  • Cook the soba noodles according to the packet instructions. Once done, rinse them under cold water to stop the cooking process.
  • Using a Y shaped vegetable peeler, shave the carrot into ribbons.
  • Prepare the Orange Ginger Dressing: in a small bowl, whisk the orange juice, ginger, sesame oil, rice vinegar and maple syrup.
  • In a large bowl, combine the noodles, carrot, cabbage, scallions, edamame, cilantro, and drizzle the dressing. Top with the sliced avocado, sesame seeds, and enjoy!

Notes

Edamame: Most edamame are pre-cooked when frozen and ready to be thawed and eaten. If you have not thawed them earlier in the day, cover them in boiling water for a few minutes and drain.
