
During the last UK heatwave, one of my English friends sent me an article mentioning royal Kate Middelton’s favourite salad to beat the heat. As you loved our previous celebrity recipe (The Jennifer Anniston Salad), we had to recreate it! The combo of watermelon and mint is super fresh and vibrant and it’s definitely a great one to enjoy on a hot summer’s day. I’ve added some almonds for extra crunch. It’s a beautiful side salad, I recommend pairing it with your favourite protein and wholegrain for a balanced and satisfying meal.

Ingredients
- 1 avocado
- 1 cucumber, diced
- 2 cups (304 g) watermelon, diced - about ¼ of a small watermelon
- 10 fresh mint, finely chopped
- ¼ cup (37.5 g) vegan feta
- 2 tbsp apple cider vinegar
- 2 tbsp olive oil
- sea salt flakes to taste
- 3 tbsp chopped almonds - optional
Instructions
- Add all the ingredients to a large bowl. Ensure that the avocado, cucumber, and watermelon are diced to a similar size for a consistent texture throughout the salad.
- Toss the ingredients together gently to combine them. Be careful not to mash the avocado or watermelon pieces as you mix.
- Once everything is well mixed, taste the salad and add more salt if needed. Enjoy this refreshing salad on a hot summer’s day.
