400gextra firm tofu
Marinade
2tbspsesame oil
1tbsptamari
1tbspbrown sugar
1tbsprice vinegar
1tbspsriracha
Sauce
1tbspginger minced
1garlic cloves minced
1tbspsriracha
½tbsptamari
¼cupcoconut milk
½cuppeanut butter
1lime, juiced
Instructions
Chop the tofu into bite-size squares and press to release some of the liquid.
Whisk together all the ingredients of the marinade in a container. Add the tofu to the container and place it in the fridge to marinate for at least two hours, preferably overnight.
If using wooden skewers, soak them in water for 15 minutes to prevent burning. Drain the skewers.
Thread the marinated tofu onto the skewers and place them in the air fryer. Cook at 180C for 8 minutes until crispy.
While the tofu is cooking, blend or whisk all the sauce ingredients together. Cook the sauce in a pot on low heat for 5 minutes to thicken.
Enjoy the tofu skewers on their own as a starter or with some rice and greens as a complete meal.
