Ingredients
200gvermicelli rice noodles
300gedamame
2carrotsgrated
2scallions, finely chopped
1red bell pepper
1small sliced cucumber
½avocado
1mango diced
½cupfresh mint, finely chopped
½cupfresh cilantro, chopped
2tbspcrushed peanuts
Sauce
1tspred chili flakes
1tbsptamari
1tbspmaple syrup
1limejuice (3 tbsp)
1tbspsesame oil
Instructions
Cook the vermicelli rice noodles as per the instructions on the packet.
Soak the edamame in boiling water, then drain and rinse.
Add all the salad ingredients to a large mixing bowl.
Combine all the sauce ingredients in a jar, stir well.
Add the sauce to the salad in the bowl and mix well.
