Peanut Tofu Ingredients
300gextra firm tofusliced in 6
1½tbsptamari
1tbspsriracha
1tbsprice vinegar
½tbspmaple syrup
2tbspsmooth peanut butter
Sushi Wraps Ingredients
3nori sheets
3rice paper sheet
½cupcooked sushi rice
½avocadosliced
½small cucumbersfinely sliced
1spring onionsfinely chopped
2tspsesame seeds
1tspsriracha
Instructions
In a lidded container, combine all the tofu marinade ingredients (tamari, sriracha, rice vinegar, maple syrup, peanut butter). Add the sliced tofu, ensuring it's well-coated in the marinade. Place in the fridge to marinade for 2 hours to overnight (the longer, the deeper the flavors)
When you're ready to assemble your sushi wraps, bake the tofu in the air fryer at 350 degrees F (180 C) for 15 minutes. Alternatively, you can bake it in a conventional oven for 20 minutes at 400 degrees F/200 C.
Lay the nori sheet on a clean dry surface. Then soak the rice paper roll in lukewarm water for about 3 to 5 seconds. Lay the softened rice paper roll on the nori sheet. Using scissors, cut from the middle, bottom up, until halfway of the wrap.
Arrange your fillings on the nori sheet. Place the sushi rice on the bottom left side, tofu on the top left side, avocado on the top right side, and cucumber on the bottom right side.
Add the final touches by drizzling sriracha across your fillings and sprinkling over the sesame seeds and sliced spring onions.
Fold your wrap, beginning with the bottom side and following the order of the fillings. Enjoy!
