Base
1cupMedjool datessoaked in hot water and drained
3cupsalmond flour
Gooey Centre
1cupalmond butter
½cupmaple syrup
Chocolate Top
80gdairy-free dark chocolate
2tbspCoconut Oil
sea salt flakesfor sprinkling
Instructions
Place the drained dates into a food processor. Add almond flour and pulse until the ingredients are well combined.
Press the dough with your hands into a small, square baking tray to create the base. Place into the fridge to firm up.
For the gooey filling, add almond butter and maple syrup to a bowl. Stir to combine until you achieve a smooth consistency.
Add the filling on top of the base and place in the freezer to set for 30 minutes.
Melt chocolate and coconut oil in a microwave-safe bowl, 20 seconds at a time, stirring in between. Pour the melted chocolate on top of the filling.
Place back into the freezer for at least an hour. When the chocolate has been set, remove it from the freezer and cut it into squares using a hot, sharp knife.
