½cupraspberriesyou can use frozen and thawed if they are not in season for you

1tbspmaple syrup
1¾cupsoats
200gvery ripe bananas2 small bananas
2tbspground flaxseed
2Medjool datespitted
3tbspcacao powder
1tspbaking powder
¼tspsea salt flakes
1½cupssoy milk
1 to 2tbspsweetener of choiceoptional: the dates and banana lightly sweeten the dish, but if you like it sweeter, I recommend adding more sweetener such as maple syrup, sugar, or monk fruit to adjust to your liking

Instructions
Preheat the oven to 400 °F fan-forced.
Place the raspberries in a shallow bowl and mash them using a fork. Add the chia seeds and maple syrup and mix well. Place in the fridge while you prepare the rest of the recipe, ideally for at least 10 minutes, to allow the chia to bloom.
To a blender, add the oats, bananas, ground flaxseed, dates, cacao powder, baking powder, salt, soy milk, and extra sweetener if using. Blend until smooth.
Transfer into 2 small oven-safe dishes (ours yield 300ml each, which we use for 2 servings). Scoop out the raspberry chia jam with a spoon and place it in the middle of the baked oats. Ensure it's covered by the chocolate mixture.
Top with chocolate chips, and bake for 30 minutes. Allow to cool down for 15 minutes, find someone to share it with, and enjoy!

Notes
The sweetness of these baked oats can vary greatly depending on how ripe the fruits are, the dates used (I recommend Medjool), cacao powder, and chocolate chips. If you know you like it sweet, I recommend adding the suggested extra sweetener, but if you forgot, you can always drizzle a little bit of maple syrup afterward. 🙂
