Brownie Baked Oats with High-Protein Icing (Dairy-Free)
Rich, fudgy chocolate baked oats that taste like dessert but eat like breakfast. Made with banana, dates, raw cacao, and walnuts, then topped with a creamy coffee yogurt icing for 24 g of plant-based protein per serving.
Preheat the oven to 350°F (180°C) convection / fan on. Line an 8 inch (20 cm) square cake pan with baking paper.
Blend the batter: In a large blender, add the rolled oats, bananas, ground flaxseed, cacao powder, baking powder, peanut powder, pitted medjool dates, and soy milk. Blend until smooth, then pour into the prepared cake pan.
Allow to set: Let it sit for 5 minutes so the flaxseed can thicken, then gently stir in the walnuts and dark chocolate chips.
Bake on the middle rack of the oven for 35 minutes.
Prepare the icing: In a bowl, combine the yogurt, vanilla protein powder, and instant coffee until smooth.
Cool and slice: Allow the bake to cool down before slicing. I like to give it about an hour, otherwise it might be a bit too soft to get proper slices. Then slice into 6 squares and add your icing when ready to eat.
Notes
Sweetener: This recipe is sweetened with banana and medjool dates. The sweetness can vary depending on how ripe your bananas are, and also on the yogurt and protein powder you use for the icing. You can taste the batter once it's blended, and if you find it not sweet enough, or if you're planning to skip the protein powder in the icing, I'd recommend adding a little maple syrup.Leftovers: These baked oats are delicious hot or cold. Just make sure not to add the icing until ready to eat. If you prefer to enjoy them warm for the first time, I'd recommend keeping the icing on the side and testing both cold and hot to figure out which one you prefer.Peanut powder substitution: If you don't have peanut powder on hand, you can use protein powder instead, or just add more rolled oats.Nut variation: If you want to bump up your plant points, swap in half walnuts and half pecans. It's so delicious that way.To warm up: Pop a slice in the microwave for 1 minute, then add the icing.
