Ingredients

Salad

  • 2 carrots
  • 2 cucumbers
  • 1 cup (89 g) red cabbage
  • 1 cup (70 g) white cabbage
  • 10 mint leaves
  • ยฝ cup (8 g) fresh coriander
  • 200 g edamame
  • 90 g dry soba noodles

Satay Dressing

  • 1 lime, juiced
  • 1 garlic clove
  • 1 tsp fresh ginger
  • 1 tbsp tamari
  • 4 tbsp peanut butter
  • 1 tsp sriracha
  • 1 tbsp rice white vinegar
  • 1 tbsp sugar

Instructions

  • Cook the edamame according to the package instructions. Rinse in cold water. Alternatively, defrost the edamame at room temperature for 2 to 3 hours before preparing the meal.
  • Cook the soba noodles as per the packet instructions. Rinse them in cold water until all the noodles are cooled. This step is crucial to prevent the noodles from sticking together.
  • Prepare your vegetables. Grate the carrots and chop the cucumbers. Finely shred the cabbage and massage it with your hands for a minute to release some juices and soften it.
  • Combine all the satay dressing ingredients in a small blender. Blend at high speed until smooth.
  • Arrange your vegetables, noodles, and edamame on a plate. Drizzle the satay sauce over the salad before serving.
