Main Ingredients
- 1.5 cups (297 g) cooked lentils
- ¼ cup (29.25 g) walnuts
- 2 cups (192 g) mushrooms
- 1 onion
- 2 tbsp olive oil
- 2 garlic cloves
- 2 tbsp tomato paste
- 1.5 tbsp taco seasoning
- 2 cups (178 g) shredded red cabbage
- ½ cup (8 g) fresh coriander
- 1 avocado
- jalapenos
- queso cashew
Instructions
- Start by roughly chopping the onion, mushrooms, garlic, and walnuts. Also, chop the fresh coriander and slice the avocado.
- Heat up a pan on medium heat, add the oil and onion, and cook for about 5 minutes until the onion becomes translucent.
- Add the garlic, mushroom, and taco seasoning to the pan, and cook for another 2 minutes.
- Add the tomato paste, walnuts, and lentils to the pan. Reduce the heat to low and let it simmer for about 5 minutes.
- Assemble your tacos in the following order: tortilla, queso cashew, lentil/mushroom mix, red cabbage, avocado, jalapenos, and coriander.
